The girls all liked it, they just requested that i cut the potatos in smaller chunks. Not a problem!!
2 Baked potatoes (i baked them the night before)
2 TBS butter
2 TBS flour
4 cups chicken broth
2 cups water
1/4 c cornstarch
1 1/2 c instant potato flakes
1 tsp salt
1/4 tsp pepper
12 tsp basil
pinch of thyme1 cup half n half
Bake two large potatos ahead of time. Cut them into small cubes just before making soup.
Heat butter in large pot. Add some onion powder. When butter is melted, add flour and whisk until a paste is formed. Gradually add broth and water.
Bring to boil, then add cornstarch and potato flakes.Add seasonings, lower heat and simmer five min.
Add cubed potatos and half n half. Bring to boil, reduce heat and simmer fifteen min.
or until thickened.
Serve in bowls and garnish with the cheese and bacon.
TIPS== I had to add more half n half because it was TOO thick. The garnish just MADE the souP. It is a little bland, so the extra flavor and texture is needed.
